Vegan za’atar potato salad

Fresh, flavorful mayo-less potato salad that is absolutely phenomenal and perfect to serve as a summer side dish at any BBQ or pot luck!

Ingredients

2 lbs small golden potatoes

1/2 red onion, diced

4 tablespoons fresh dill, finely chopped

3 tablespoons fresh parsley, finely chopped

Pink salt and pepper

Za’atar dressing:

1/4 cup olive oil

Juice of two lemons

1/2 tablespoon za’atar seasoning

3 cloves of garlic, minced

1 teaspoon pink salt

Instructions

Steam the potatoes whole until tender or a knife goes through. You don’t want them to be too soft.

While the potatoes are cooking, add all of the dressing ingredients into a jar, cover and shake well.

Chop the herbs and onion and set aside.

Once potatoes are done, allow to cool a bit then cut them in half.

Toss all of the ingredients together, including the dressing.

You can serve it warm or put into the fridge to cool before serving. The longer you allow the dressing to sit on the potatoes, the more flavor you’ll have.

Store leftovers for up to a week.
