vegan smokey tofu scramble
Limited ingredient scramble that is only 12sp for the entire plate, 5sp without the tots and only 1-2sp without the bacon. You can add in more vegetables or keep it simple with just sauteed tofu and bacon. Delicious and festive for the holidays (red and green).
Ingredients
1 1/2 tsp avocado oil
1 mini red bell pepper, diced
1/2 tray of button mushroom, diced
1/2 block of extra firm tofu, strained thoroughly
1 cup spinach
4 slices Sweet Earth Benevolent Bacon, chopped
Pink salt and black pepper
12 tater tots
Instructions
If you want to have the tots, preheat oven to 425 and bake for 15-25 minutes.
While those are baking, warm oil in a large pan over medium high heat.
Add peppers, cook for four minutes.
Add mushroom and bacon, cook until mushrooms have softened and started to brown.
Crumble in strained tofu, spinach, salt and pepper.
Stir occasionally and allow spinach to wilt.
Serve hot.
