vegan StOvetop Goji Berry granola bars
Granola bars are super easy to make and are extremely versatile. You can add your favorite mix-ins and toppings based on your own preference. I love incorporating superfoods, chia seeds, hemp seeds, goji berries and many more. This time around I made a simple goji berry peanut butter oat bars.
Ingredients
1/2 cup coconut oil
1/2 cup pure maple syrup
1 tsp vanilla extract
1 cup all natural peanut butter (or your favorite nut butter)
3 cups rolled oats (you can use gluten free)
1/2 cup goji berries
1/2 cup chia seeds
Instructions
Melt the coconut oil in a saute pan.
Add maple syrup and vanilla extract, allow to boil.
Turn off heat and add peanut butter, mix well.
Fold in oats, chia seeds and goji berries.
You can also add chocolate chips, nuts, coconut flakes, etc.
Press mixture into a parchment paper lined pan with a spatula and place in fridge until completely cooled.
Cut into squares and store in a covered container in the fridge.
