VEGAN PIZZA PINWHEELS
These are super easy to whip up, you can make the pizza dough from scratch like I did or buy store bought! Fill with your favorite pizza combo! Great for a football game, an easy dinner, a watch party, or an appetizer.
HOMEMADE PIZZA DOUGH
Ingredients:
2 cups bread flour
2 1/4 teaspoon instant yeast (or 1 packet)
2 teaspoons sugar
1 teaspoon salt
1/2 teaspoon garlic powder
1 teaspoon dry basil
2 tablespoons avocado oil or olive oil
3/4 warm water
INSTRUCTIONS:
Combine dry ingredients in a bowl, whisk together.
Combine oil and water, pour into dry mixture.
Fold ingredients together with a wooden spoon.
The dough will be sticky but if it’s sticking too much to the side of the bowl, add a 1/4-1/3 cup more flour.
Cover bowl and leave on counter to rise for 1 hour, you want it to double in size.
Preheat oven to 425.
On a floured surface, roll out the dough in a rectangle shape, sprinkling with flour til the dough is not sticky.
Pizza Pinwheels
On the rolled out rectangle shaped dough, top with your favorite sauce (pesto, marinara, alfredo, etc) so all of the dough is covered but not too thick that it’ll spill over the edge as you roll it.
Top with shredded vegan mozzarella (I like Follow Your Heart or Violife) or liquid pizza cheese (Miyoko’s) and grated vegan parmesan (Follow Your Heart).
This time around, I sautéed diced onion and added that to the top of the cheese. You can also top with spinach/arugula, your favorite vegan pizza toppings (Field Roast sausage, Sweet Earth chick’n, etc).
Roll into a log, as if you’re you’re making cinnamon rolls.
Gently cut into 1 inch slices, using a serrated knife or dental floss.
Place on a silicone mat lined cookie sheet, about 1 inch apart (these will expand).
Bake for 15-18 minutes, until the bottoms are golden brown.
