Vegan double cacao cookies

Only six ingredients for these deliciously rich, decadent cookies. These will make your house smell like maple donuts and hot cocoa. A fantastic healthy option for your next sweet craving. Gluten-free, soy-free and, swapping coconut butter for coconut oil instead, these can be plant paradox friendly.

Ingredients

2 cups cassava flour

1 cup Artisiana cacao bliss coconut butter, melted (for Plant Paradox - 1 cup coconut oil and 1/2 cup cacao powder)

1/4 cup Lakanto classic monk fruit sweetener

1/2 cup Lakanto monk fruit sweetened maple flavored syrup (you can also use regular maple syrup), you may need more than 1/2 cup

1 teaspoon baking soda

1/2 cup 72% or darker chocolate chips

Instructions

Preheat oven to 350.

Combine all ingredients together in a medium sized bowl, folding in the chocolate chips last.

If your batter is dry, add a little more “maple” syrup until you can roll the dough in the palms of your hands without it crumbling.

Roll 1/4 cup of dough in your hands and press onto a parchment lined cookie sheet.

Press a few extra chocolate chips into the tops of the cookies.

Bake for 10 minutes.

Place on a cooling rack and allow to cool before eating, this will ensure the cookies set.
