Raw vegan sundried tomato pesto bOaTs

This is perfect to have as a meal, serve as an appetizer or have as a snack. So fresh and delicious!

Ingredients

4 cups fresh basil leaves

2 cups fresh spinach

1/4 cup sundried tomatoes

2 garlic cloves

Juice of 1/2 lemon

1/2 cup raw sunflower seeds

Salt and pepper, to taste

Romaine lettuce leaves

Fresh tomatoes

Salt and pepper for the top of boats

Instructions

Combine all ingredients (except for romaine and fresh tomatoes) into a high speed blender or food processor. Blend until smooth. You want it to be thick.

Spoon pesto into lettuce leaves and top with fresh tomato, salt and pepper.

Store extra pesto in the fridge for up to a week.
