Vegan STRAWBERRIES and Cream oatmeal bars
I had a bunch of strawberries that were very ripe but knew I wouldn’t get to all of them before going bad. In comes this recipe. I was initially going to make a shortcake loaf decided on oatmeal bars and I’m so glad I did. You can definitely use other berries you have on hand! So easy to make and super tasty!
Ingredients
1 cup rolled oats
3/4 cup unbleached all purpose flour
1/3 cup brown sugar
1/4 teaspoon ground ginger
1/8 teaspoon pink salt
6 tablespoons vegan butter, melted
2 cups fresh strawberries, diced
1 teaspoon cornstarch
Juice of half a lemon
2 tablespoons white sugar
“Cream” Glaze: 1 cup sifted powder sugar, 1/2 teaspoon vanilla extract, and 2 tablespoons unsweetened almond milk
Instructions
Preheat oven to 375.
Combine oats, flour, brown sugar, ginger, and salt together in a medium bowl.
Add melted butter to mixture and combine well.
Press oat mixture (reserve 2/3 cup of mixture for topping) into parchment lined 9x9 baking pan.
In a medium bowl, combine strawberries, cornstarch, lemon juice, and sugar together. Stir until sugar dissolves. Drain of all excess liquid.
Top oat mixture with the strawberries mixture then sprinkle remaining oat mixture on top.
Bake for 30 minutes, until fruit bubbles and top is golden.
Allow to cool then drizzle with “cream” glaze.
Cut into squares or bars. Store in an air-tight container.
