Vegan shiitake asparAgus tacos

Flavorful veggie tacos using jicama slices as tortillas. This zero point meal is perfect if you’re following WW or even if you wanted a low-carb dinner option. You can play around with different veggies but the combo of meaty shiitake mushrooms, tender asparagus and spicy chipotle is delicious!

Ingredients

1 tray of sliced shiitake mushrooms

1 bunch asparagus, cut into thirds

1/2 tablespoon chipotle pepper, ground

2 cloves garlic, minced

2 green onions, chopped

1 tablespoon taco seasoning, non-dairy

Salt, to taste

Avocado oil spray

Jicama tortillas (sliced jicama) or traditional corn tortillas

Lime wedges for tacos

Sides: fat-free refried beans and steamed broccoli

Instructions

In a large sauté pan, add spray oil and minced garlic. Cook until garlic begins to golden.

Add mushroom, green onion and asparagus, tossing frequently until veggies start to become tender.

Add seasonings and continue to cook until the veggies brown.

Serve inside sliced jicama with fresh lime wedges.
