VEGAN HOT COCOA COOKIES

The base of these cookies are chocolatey and buttery; topped with a homemade chocolate ganache and a vegan vanilla marshmallow to give that hot cocoa touch. I made these using cacao powder but you can definitely replace that with regular cocoa powder. Perfect holiday or winter cookie!

 

Ingredients

1 cup + 2 tbsp Earth Balance butter

3/4 cup cane sugar

1/3 cup cacao powder 

1/2 tsp sea salt

1/2 tsp baking soda

1 tsp baking powder

2 cups flour

8 ounces Enjoy Life chocolate chunks

1/2 cup unsweetened almond milk

Dandies vanilla marshmallows

 

Instructions

Cream/whip butter and sugar together; add cacao powder.

Sift in salt, soda, powder and flour; combine.

Roll into balls, place on lined insulated cookie sheet and press down with your thumb to create a small divot. 

Bake at 350 for 8 minutes.

To make ganache, bring 1/2 cup almond milk to a boil, turn off heat and add chocolate chunks; whisk. 

Once smooth, allow to cool before drizzling over cookies.

Cut each marshmallow in half, long ways. Place half on cooled cookie with a small dot of ganache underneath then drizzle over top of cookies.

Allow ganache to completely harden before serving.
