Easy vegan Pasta skillet

Only a few ingredients and you can have dinner ready in under 20 minutes! Delicious and versatile, you can add veggies, omit the vegan meat and make it your own. Gluten-free and always vegan!

Ingredients

1 box Banza gemelli chickpea pasta

1 can Muir Glen tomato sauce

2 cloves minced garlic

1 package vegan ground meat (I used Meatless Farm Co. Brand this time)

2 cups organic arugula or spinach

1 cup shredded vegan mozzarella

1/2 tablespoon dried Italian herbs

Pink salt and pepper, to taste

Instructions

Start by boiling the water for the pasta. Cook according to package.

In a large skillet or sauté pan, spray with olive oil spray and add the ground meat. Break up with a wooden spoon.

After five minutes, add minced garlic and seasonings.

Once “meat” is browning, add arugula or spinach. Allow to wilt.

Add can of tomato sauce and cook for another five minutes.

Stir in drained and rinsed pasta and top with cheese.

Turn heat down to low and allow cheese to melt.

Serve hot.
