Vegan gluten-free sugar-free banana bRead

A healthier version of the original buttery banana bread recipe. Not having to use any gluten or refined sugar, this comes out light, fluffy and delicious!

Ingredients

1 flax egg (1 tbsp flax meal + 2.5 tbsp water)

3 ripe bananas

1/2 cup mixed nut butter, room temperature

3 tbsp avocado oil

1/2 cup coconut sugar

3 tbsp agave nectar (can use coconut nectar)

Pinch of pink salt

3/4 cup canned coconut milk 

1 tbsp baking powder

3/4 cup ultra fine almond flour

2 1/4 cup cassava flour

Nuts or chocolate chips - optional 

Instructions

Preheat oven to 350.

In a medium bowl, add flax egg ingredients and allow to thicken.

Once thickened, add three ripe bananas to bowl and mash with the back of a fork.

Add nut butter, oil, sugar, nectar, salt and milk, mix well.

Add remaining ingredients, mix well.

In a parchment lined 7x11 pan or large loaf pan, add batter and smooth top with the back of a spoon. I sprinkled a tablespoon of coconut sugar to the top.

Bake for 55-60 minutes, the top will be firm to the touch and a toothpick will come out clean.

Allow to cool before cutting into 9 slices and, if desired, slice down the middle to make 18 pieces.
