Vegan Spanish Rice

Perfect side for Taco Tuesday. Easy recipe that can easily be altered to fit your desired spiciness level. I used brown rice but you can use traditional white rice, quinoa or cauliflower rice. 

 

Ingredients

1 cup pre-cooked rice (or use Miracle Noodle rice)

1 tablespoon avocado oil

1/2 leek, chopped

1 can diced tomato with green chiles

2 tablespoons tomato paste

1 tsp cumin

1/2 tsp cayenne powder

1/2 can organic yellow corn

1 cup vegetable broth

Salt and pepper

 

Ingredients

Cook rice according to package directions.

In a saute pan, heat oil and add chopped leek.

Saute for 5 minutes, until leek is golden.

Add cooked rice and the rest of the ingredients. 

Allow to cook on low for 15 minutes until liquid has absorbed. 

Serve with a garnish of cilantro.
