Vegan Banana Nut Pumpkin Bread
Perfect banana bread with a Fall touch. You’ll love the combination of sweet banana, warm pumpkin, crunchy nuts, and rich chocolate.
Ingredients
4 ripe bananas, mashed
1 cup puréed pumpkin
2 tablespoons vegan butter, softened
1/2 cup white sugar
1 teaspoon vanilla extract
2 cups unbleached all-purpose flour
3/4 teaspoon baking soda
1/2 teaspoon pink salt
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 cup chopped walnuts
1/2 cup dark chocolate chips
Instructions
Preheat oven to 350.
Combine all wet ingredients in a large mixing bowl, combine well.
Add dry ingredients, mix well.
Fold in nuts and chocolate.
Pour batter into a parchment lined loaf pan or small glass casserole baking dish.
Bake for 30 minutes, turn down oven to 325, bake an additional 15 minutes. If the top is cooking too fast, cover with aluminum for the final 15 minutes. Make sure a toothpick comes out clean.
