Vegan creamy avocado pasta
A few ingredients are needed to make this super creamy, rich pasta sauce. You can play around with this based on what you have in your fridge or pantry. Delicious and easy!
Ingredients
1 ripe avocado
1 tablespoon olive oil
2 garlic cloves, minced
6-8 fresh basil leaves, rough chopped
2 teaspoons pink salt
1 teaspoons black pepper
1/4 cup walnuts, chopped
2 cups spaghetti, cooked
Instructions
Cook a serving of pasta according to package.
In a shallow pot or sauté pan, add oil and minced garlic. Once fragrant, add basil, salt, and pepper.
Once basil has wilted, add walnuts. Cook an additional two minutes.
Smash the pitted avocado in a small bowl and add garlic basil mixture, stir to combine.
Toss in pasta and serve hot with dried Italian seasoning sprinkled on top.
This will serve one large helping or two adult sides.
