Homemade candy bars

These healthyish candy bars are so easy to make and delicious! Must try if you love peanut butter and chocolate!

Ingredients

1 cup medjool dates, pitted

3/4 cup crunchy peanut butter

1/2 cup nuts (I used walnuts)

1 teaspoon vanilla extract

1/2-1 cup semi sweet vegan chocolate chips, melted

Optional: 1/2 cup puffed rice cereal

Instructions

Combine all ingredients, except the chocolate chips, into a food processor or high speed blender, blend I til smooth. If your dates aren’t soft, soak in boiling water for an hour before blending, drain water.

Press mixture into pan and top with melted chocolate. If using puffed rice, add it to the top of the date mixture, press down into mixture, then top with chocolate.

Refrigerate until set. Makes about 12 bars.
