Vegan potato carrot stew

Hearty, yet light. This flavorful stew is easy to whip up and delicious! You could add in more vegetables, if you have a larger variety on hand. Play around with the ingredients.

Ingredients

1/2 tablespoon olive oil

2 cups carrots, chopped

2 cups potatoes, washed and cubed

2 tablespoon tomato paste

1 cup split red lentils

1/2 tablespoon veggie bouillon

4 cups water

1 teaspoon ground paprika

1/2 teaspoon ground cinnamon

Pink salt and pepper, to taste

Instructions

Heat a medium pot with olive oil. Add chopped vegetables. Cook until carrots soften.

Add lentils, tomato paste, bouillon and water.

Bring to a boil, add spices and seasonings then simmer for 20-25 minutes.

Store leftovers in an air-right container in the fridge. This would be great for lunches for the week.
