Vegan celery cacao brownies
The current health craze is celery juice but when you’re done juicing your celery, what do you do with the leftover pulp? Here’s a great recipe that’ll use up all the celery pulp and also make a delicious dessert that will fool kids, family and friends into eating a healthier brownie!
Ingredients
1 banana, mashed
1 cup super fine blanched almond flour
5 tablespoons pure maple syrup
2 cups cold celery pulp
2 tablespoons cacao powder
1 flax egg (1T ground flax seed + 2.5T water)
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup Enjoy Life mini morsels (or any vegan chocolate chips)
Instructions
Make flax egg and set aside.
Preheat oven to 350.
Combine mashed banana, almond flour, maple syrup, baking soda, cacao powder, salt and celery pulp in a bowl. Mix well. Add thickened flax egg.
Fold in chocolate chips.
Spread brownie batter into a parchment lined 9x9 baking dish.
Bake for 45 minutes.
Allow to completely cool before cutting.
Store in an air-tight container in the fridge.
