Vegan cheeze sauce

The tastiest cheeze sauce that can be used for mac and cheese, nachos (just add a few spices), queso dip (add sautéed peppers and spices), drizzled on steamed or roasted veggies and so much more.

Ingredients

Avocado oil spray (I use Chosen Foods brand)

1 shallot, diced

1 garlic clove, minced

1 cup unsweetened almond milk

1/4-1/2 cup nutritional yeast, depending on desired cheesy flavor

1/4 cup vegan cheddar shreds (I used Violife brand)

Pink salt and pepper, to taste

Instructions

Spray a sauté pan with oil, over medium heat.

Add shallot and garlic.

Once shallot becomes translucent, add milk and yeast. Allow to boil for a minute, to thicken.

Stir in cheddar shreds, salt and pepper. Allow shreds to melt.

Serve over pasta (I prefer Miracle Noodles ziti), tortilla chips (add nacho toppings) or vegetables. Options are endless.

This will make a single serving portion so double or quadruple if you want to make the sauce for a large group or to have leftovers. Store in a covered container, in the fridge, for up to a week. Warm before serving.
