vegan zero point Veggie noodle soup

Delicious and hearty without being heavy. I recently started WW and love that this soup is super filling and is 0sp if you have one serving and 1sp if you have a second serving. You can add more vegetables (be careful though - potatoes isn’t a zero point food). You can also add meat or vegan meat of your choosing into the soup, if you have the available points.

Ingredients

1 tsp olive or avocado oil (zero points since this entire pot is 8 servings)

1/2 purple onion, diced

1 bag baby carrots, chopped

2 cups green beans, chopped

1 can corn, drained

2 bags Miracle Noodle ziti, drained and rinsed

1 cup cherry tomatoes, halved

1/2-1 tsp each: lemon pepper, cumin powder, chili powder, pink salt, garlic powder

1 container Pacific low-sodium vegetable broth (4 cups)

Instructions

Warm oil in a large pot.

Add onion, cook until translucent.

Add carrot and green beans, cook an additional 5 minutes.

Add tomatoes and seasonings, stir.

Add a container (4 cups) of low-sodium broth.

Bring to a boil, add can of corn and turn down to low-medium, cook until carrots begin to soften.

Add both bags of ziti, cook an additional 5 minutes then serve.

This will make 8 servings.
