Vegan green apple fennel salad

Easy, fresh and crisp salad to bring to a pot luck or have as a meal on a warm Summer’s day. You can add additional veggies to this, the options are endless.

Ingredients

Salad:

1 whole fennel, thinly sliced - springs saved for garnish

6 celery stalks, thinly sliced

2 green apples, thinly sliced - peeling skin is optional

Optional additions: microgreens, avocado, nuts or seeds

Dressing:

1 large lemon, juice of

3 tablespoons Dijon mustard

2 garlic cloves, minced

1 tablespoon pure maple syrup

1/4 cup avocado oil or extra virgin olive oil

salt and pepper, to taste

Instructions

Combine all dressing ingredients into a mason jar, cover and shake vigorously. Test dressing and adjust ingredients to preferred taste.

In a large bowl, add prepped vegetables, fruit and any additional toppings.

Toss in dressing, make sure it’s covered well but not dripping excess dressing.

Serve immediately. Store any leftover prepped salad in fridge.
