Vegan chOcolate eggs

A healthy version of the Reese’s counterpart. Just six ingredients are needed to make these fantastic candy-like treats!

Ingredients

2 pitted medjool dates

1/4 cup unsweetened coconut flakes

1/2 cup unsweetened sunflower butter

2 tablespoons maple syrup

2 tablespoons maca powder

1/2 cup Enjoy Life semi-sweet morsels

Instructions

Blend all ingredients together, except for the morsels, in a high-speed blender or food processor. The consistency will be thick.

Separate sunflower date mix into 7-8 balls and form into egg shaped. Place on a parchment paper lined dish.

Freeze for 30-60 minutes.

Over a pot of boiling water, place a glass or metal bowl on top and pour in morsels. Allow to melt over a medium-low heat.

Once chocolate is smooth, pull out frozen “eggs” and dip them into chocolate. Use a spoon to thoroughly coat.

Place the chocolate dipped eggs onto parchment lined dish and put back into the freezer for 30 minutes, or until coating is hard.

Keep frozen until you’re ready to eat.
