Vegan carrot dogs
I’ve heard about the carrot dog for years but was finally inspired by @sweetsimplevegan (on Instagram) to try them by making my own hot dogs out of carrots! I changed a few ingredients to make them completely soy-free and almost completely sugar-free.
Ingredients
8-10 large organic carrots, cut to the length of the bun and peeled into the shape of a hot dog
4 cups vegetable broth
1/2 cup apple cider vinegar
6 tablespoons coconut aminos
3 tablespoons monkfruit syrup
2 tablespoons liquid smoke
1 tablespoon vegan Worcestershire sauce
2 teaspoons ground paprika
2 minced garlic cloves
1 tablespoon vegan mesquite seasoning
Ground black pepper
Hot dog buns (pretzel buns are fantastic)
Favorite hot dog toppings: ketchup, pickles, mustard, sauerkraut, sautéed onions and/or jalapeño slices
Instructions
Add all ingredients into a large pot and bring to a boil.
Boil the carrots for 10 minutes or until tender but not soft.
Transfer the carrots to a skillet or grill (make sure to spray with oil so they don’t stick).
Once charred/seared, add to a toasted bun and top with your favorite toppings.
