Vegan fried rice

Did you know you can make fried rice in under ten minutes? I threw a bunch of veggies and vegan proteins I had on hand into this so feel free to do the same. The furikake seasoning can be found at Trader Joe’s and I think it really helps add a little something extra.

Ingredients

3 cups day old rice (I used jasmine rice)

1 tablespoon avocado oil

1/4 white onion, diced

1/2 cup extra firm tofu, crumbled + 1 teaspoon ground turmeric

1/2 cup tempeh, chopped

1/2 cup shredded carrot

1/2 cup broccoli florets, chopped

2/3 cup English peas

3 tablespoons Coconut Aminos, more for serving

2 tablespoons Garlic sauce

Seasonings, to taste: pink salt, ginger powder, lemon pepper, onion powder, furikake seasoning

Optional: 1 teaspoon sesame oil & sriracha, to taste

Instructions

In a large sauté pan, add oil and heat over medium high heat.

Add the onion and proteins to pan. In this case, crumbled tofu, chopped turmeric, and tempeh. Turmeric is added to give the tofu an egg appearance. Cook until edges of tofu begin to golden.

Add veggies and rice to pan and toss in coconut aminos and garlic sauce, optional sesame oil at this point. Add seasonings, to your preferred taste. Mix well to combine flavors.

Cover pan for two minutes until broccoli becomes bright green.

Uncover and cook an additional five minutes until heated through. You want your veggies to still have a bite to them.

Serve hot with optional sriracha on top.

This is an easy recipe to double for a large group or to have plenty of leftovers.
