Raw vegan tacos

This is my tried and true raw vegan taco "meat" and nacho cheese recipes. You can use the taco meat and nacho cheese for nachos, tacos, wrap, etc. 

 

Ingredients

Taco Meat:

2 cups raw carrot

1 tbsp apple cider vinegar (Bragg's raw ACV is delicious)

1/2 cup raw sunflower seeds

1/2 cup raw pumpkin seeds

1 tbsp chili powder

1 tsp paprika 

1/2 tsp cumin powder

Salt and pepper

Nacho Cheese:

1 cup raw cashews

2 tbsp raw tahini

1 tsp chili powder

Salt

1 green onion

Tacos prep:

Romaine leaves

Jalapeno, seeded and diced

Green onion, diced

Smashed avocado or homemade guacamole

 

Instructions

In a food processor, add taco meat ingredients, blend until everything is broken down but still chunky. Put into a bowl.

In a clean food processor, add the nacho cheese ingredients, blend until smooth. You may need to add a few teaspoons of water to thin it out a bit. Put into a bowl.

Prep taco toppings: dice up a raw jalapeño, dice a green onion, mash avocado or make homemade guacamole. 

In a romaine leaf, add meat, cheese and top with your favorite veggies. You can also add a homemade sour cream (will post a recipe soon).
