Vegan Cookies For One

Have you ever craved a chocolate chip cookie but didn't want to make a full batch and have them lie around the house tempting you to snack on them? Well, that's when you need to make this recipe for cookies for one. Two cookies, one for you and one to share (or both for you) and perfect to beat your craving. 

 

Ingredients

2 tbsp Earth Balance vegan butter

2 tbsp packed brown sugar

2 tbsp organic white sugar

Pinch of salt

1/2 cup unbleached organic all-purpose flour

1/4 tsp vanilla extract

1/8 tsp baking soda

Small flax egg - 1/2 tbsp flax + 1 1/2 tbsp water

Handful of Enjoy Life chocolate chunks or chips

Optional: 2 tbsp peanut butter or chopped nuts

 

Instructions

Preheat oven to 350.

Microwave butter for 25 seconds til almost fully melted.

Add all ingredients except chunks to butter. If batter is too dry, add a tablespoon of water.

Mix thoroughly then fold in chocolate chunks.

Mold together two palm-sized cookies and put onto a parchment paper lined cookie sheet. They will spread while cooking so make sure to give some space between cookie dough.

Bake for 15-20 minutes until cookies are cooked to preference (chewy or crunchy).
