Vegan mexican frittata
Wanted to change up my typical breakfast this morning and threw together a few ingredients to make this Mexican frittata. The great thing about a frittata is you can play around with any ingredients you have on to make it your own! The best part is you can make this on the stove instead of in the oven.
Ingredients
Avocado oil spray
4 golden potatoes, small diced
8 grape tomatoes, halved
1 cup prepared taco meat (Gardein meat crumbles + taco seasoning packet + 1/2 cup water)
2 green onion, chopped
1 bottle Just Egg or 1 block silken tofu blended with turmeric, salt, and pepper
Seasonings: lemon pepper and onion salt
Optional toppings: hot sauce, vegan sour cream, avocado
Instructions
In a large sauté pan sprayed with avocado oil, add diced potatoes, halved tomatoes, and seasonings. Cook until potatoes are golden and crispy.
Add taco meat and green onion, cook through.
Pour in a bottle of Just Egg, turn heat down to low, and allow to cook, scraping sides down a bit. Cover with lid and allow to cook completely with now liquid left.
Cut into pizza slice segments and serve with your favorite taco toppings!
