easy Vegan tomato onion pasta
Another day, another pasta sauce recipe. Been on a kick with playing around with whatever vegetables I have in my fridge or veggie bowl that needs to be eaten. I had gotten a bag of organic baby tomatoes from my friends garden and decided to make a sautéed tomato sauce that wasn't anything like traditional marinara. Just like my other recipe, you can play around with whatever ingredients you have on hand! You can even add a little white wine to the pan. Mmm!
Ingredients
1 box Banza pasta (use Miracle Noodle for a low carb option)
2 tbsp olive oil
1 packet french onion dip mix
3 cups spinach
1 cup organic whole baby tomatoes
1/2 cup water
2 tbsp nutritional yeast
Pink salt and pepper, to taste
Garlic powder, to taste
Vegan mozzarella for the top
Instructions
Boil water and cook pasta according to package. Do not overcook.
In a saute pan, warm olive oil.
Add packet of onion dip mix and stir til fragrant.
Add spinach, tomatoes and water.
If desired, you can make this cheesy by adding nutritional yeast.
Allow to boil then simmer for five minutes.
Taste and add garlic, pink salt and/or black pepper, if needed.
Pour drained pasta into pan and fold in the sauce.
Enjoy!
Serve with shaved vegan mozzarella on top, if desired.
