Vegan zucchini chips

Three ingredients and you can make your own homemade zucchini chips to go with a homemade hummus or have as a mid-day crunch. Zero points for the whole shebang.

Ingredients

3 zucchinis

Avocado oil spray (I prefer Chosen Foods)

Pink Himalayan salt

Instructions

Thinly slice the zucchini (cut off the stem and toss).

Lay slices, spaced out, on a large clean kitchen towel.

Sprinkle with pink salt and allow the zucchini slices to sweat.

After a half hour to an hour, place another towel on top, to blot the moisture off.

Preheat oven to 250.

Transfer the slices on two parchment lined cookie sheets.

Spray with avocado oil spray and sprinkle with pink salt.

Bake for two hours or until they are dark and golden.

I pulled out a few slices that were finished before the other slices. Keep an eye on them and pull off any before they burn.

Store in a glass jar or covered dish with a piece of parchment paper to absorb moisture.
