Vegan plant paradox stir fry

Another delicious Plant Paradox meal. Had a craving for stir-fried vegetables and threw in a bag of Miracle Noodles rice to create a veggie fried rice. This was absolutely fantastic and is one of my favorites when a craving hits. 

 

Ingredients

2-3 tbsp extra virgin olive oil

1 cup button mushrooms, sliced thin

1 cup carrots, peeled and sliced

1/2 leek, sliced

1 cup broccoli florets, chopped into bite sized pieces

1/4 cup water chestnuts

1/2 cup chopped macadamia nuts

1/4 cup Coconut Secrets coconut aminos

1 clove fresh minced garlic

Ginger powder or fresh ginger, mashed, to taste

Lava salt, to taste

1 bag Miracle Noodle rice, drained and rinsed

 

Instructions

Heat oil in a large pan or wok. 

Add mushrooms, carrots, leek, broccoli, garlic and ginger. 

Cook for five minutes then add coconut aminos and water chestnuts. 

Cook until vegetables are tender and most of liquid has absorbed. 

Add bag of rice and half of the chopped macadamia nuts. 

Cook until all liquid has absorbed. 

Serve hot and top with macadamia nuts and a sprinkle of lava salt.
