Vegan Brownie Cookies 

Wanted a cookie but also wanted the fudginess of a brownie - made something that’s the best of both worlds. I used Coconut Secrets chocolate chunks and their coconut sugar. These came out perfect! I personally preferred them the day after.


Ingredients 

1 cup chocolate chunks 

3 tablespoons vegan butter 

1/4 cup unbleached all-purpose flour 

1/4 teaspoon baking powder

2 flax eggs (2 tbsp ground flax + 6 tbsp water)

1/2 cup coconut crystals (sugar)

Additional 1/2 cup chocolate chunks 

Instructions

Melt butter and chocolate chunks together, stir until smooth. Allow mixture to cool five minutes. 

During the five minutes, make flax egg and set aside to thicken.

Preheat oven to 350.

Add flour, baking powder, and coconut sugar to melted chocolate. 

Add thickened flax eggs. Combine well. 

Fold in a 1/2 cup chopped chocolate chunks. Optional: add chopped nuts.

On a parchment lined baking sheet, scoop two tablespoons of cookie mixture for each cookie and bake eight at a time. Bake for 12 minutes. 

Allow cookies to sit on the baking sheet, at room temperature, for five minutes then transfer to cooling rack. 

Store in a covered container at room temperature.

Makes 12 cookies. 

If you want to make traditional brownies, double recipe, add batter to 9x9 baking dish sprayed with oil and bake for 25-30 minutes at 350; until a toothpick comes out clean.
