Vegan Spinach dIp
This is one of the things I’ve made that has fooled many non-vegans into thinking it was the real thing. I brought it to a Super Bowl party and it was gone before anything else on the table.
Ingredients
3 packages frozen spinach, thawed and drained
24 ounces vegan sour cream (you can make your own by using my recipe or you can use Tofutti brand)
2 cups vegan mayo (Chosen Foods, Follow Your Heart, Sir Kensington’s Fabanaise and Best Foods are great brands)
2 packets onion soup mix (I use Simply Organic french onion dip mix - I get mine from Wholefoods)
8 ounce can of water chestnuts, drained and diced
Handful of chopped green onions or chives
Black pepper and pink salt, to taste
Instructions
Mix all of the ingredients together and allow to marinate, in the fridge, in a covered container for 6 hours minimum. This will allow the water chestnuts to soften.
Serve chilled with veggies or a sliced baguette.
