Vegan cowpie cookIes
I’m jokingly calling these Cowpie Cookies, purely because they look like, well, cow poop patties. Name aside, these chocolate chunk cookies are so delicious and is another way of using up the leftover celery pulp you have from juicing celery.
Ingredients
1 1/2 cups cassava flour
1/2 tsp salt
1 tsp baking soda
2 tbsp cacao powder
1/2 cup melted cacao butter
1 cup celery pulp, blended to eliminate large chunks
1 flax egg (1T ground flax seed + 2.5T water)
1 tsp vanilla extract
6 tbsp pure maple syrup
1/2 cup unsweetened coconut milk
1/2 cup mega chunk Enjoy Life morsels
Instructions
Preheat oven to 350.
Make flax egg and set aside to thicken.
Combine dry ingredients into a bowl and set aside.
Melt cacao butter and add celery pulp, combine.
Add vanilla, maple syrup, milk and flax egg to celery pulp mixture, combine well.
Add dry ingredients to wet ingredients, combine well.
Fold in chocolate chunks.
Roll batter into 1” balls and bake nine on each parchment lined pan (makes 18 total) for 25 minutes.
Halfway through baking, press cookies down flat with the back of a measuring cup.
Allow to cool for ten minutes.
