Vegan peanut Banana chocolate chIp cookies
Minimal ingredients make these cookies perfectly chewy and sweet without added refined sugar.
Ingredients
1 large ripe banana, mashed
1 cup peanut butter, room temperature (I used Trader Joe’s chia and flax chunky peanut butter)
2 flax eggs (2 tablespoons ground flax + 6 tablespoons water - set aside to thicken)
1 teaspoon baking soda
6 tablespoons organic flour
1/2 cup coconut sugar
1/2 teaspoon pink salt
1 teaspoon vanilla extract
1/2 cup Enjoy Life vegan morsels
Instructions
Preheat oven to 350.
Mix mashed banana, flax eggs, vanilla and peanut butter together.
Add remaining ingredients to mixture (excluding the morsels). Mixture will be thick and somewhat sticky.
Fold in morsels.
Using a tablespoon, add cookie dough to parchment lined cookie sheet. Will make 8 cookies. If you desire, press the cookies down with the back of a floured fork in a criss-cross pattern.
Bake for 15-20 minutes, until tops are firm. Cool on a rack for 15 minutes. Insides will be soft.
