Cauliflower vegan "Meatball" pizza

 

Play around with your favorite pizza toppings for this pie. This time around, I made a "meatball" pizza but you could definitely make a veggie pizza, all "meat" or add the not so typical toppings. 

 

Ingredients

1 frozen cauliflower pizza crust from Trader Joe's

1 cup of your favorite jarred marinara (I used Trader Joe's tomato basil marinara - no added sugar!)

Miyokos Kitchen brand mozzarella (or your favorite vegan mozzarella) 

Gardein brand meatless meatballs (you can make your own vegan meatballs using my “vegan veggie meatball” recipe under “celery pulp”)

Arugula

Garlic Salt

 

Instructions

- Saute the meatballs in a pan with a little oil until golden brown. This will add a wonderful texture to the meatballs before baking.

- While prepping the meatballs and other toppings, bake the cauliflower crust according to package directions. I add garlic salt to one side to add additional flavor. Make sure the crust is fully cooked before adding the toppings.

- Once crust and meatballs are ready, top crust with marinara, meatballs (cut in half) and mozzarella chunks throughout. You can add garlic cloves or additional toppings then place back in the oven for 5-10 minutes, until cheese is melted.

- Add arugula and bake an additional minute, until the arugula had wilted.

- Enjoy hot!
