Vegan gf lentil pasta bake

If you're looking for a gluten free pasta recipe or a dish to serve a gluten free family member, this will surely be a hit! This recipe replaces the typical white flour pasta for red lentil pasta.

Ingredients

1 bag of Trader Joe's red lentil pasta (you can use any lentil pasta brand)

1/2 cup Rao's Homemade red pasta sauce

1/2 cup unsweetened nut milk

1/2 cup raw cashews

1 tsp apple cider vinegar

3 tbsp nutritional yeast

1/2 tbsp avocado oil

Sliced crimini mushrooms

Garlic powder

Salt and pepper

1 bag Parmela Creamery mozzarella shreds

 

Instructions

Boil bag of lentil pasta according to package directions.

into a food processor, add nut milk, cashews, vinegar, yeast and salt. Blend til smooth. You want this mixture to be creamy so add a splash more of nut milk, if needed.

Preheat over to 400 degrees.

Into a casserole dish, add cooked pasta, 1/2 cup red pasta sauce and 1/2 cup cheese sauce; stir to evenly coat pasta.

Into a saute pan, add avocado oil then add mushrooms, garlic powder, salt and pepper. Cook until golden. Add to pasta dish.

Fold in 1/2 a bag of mozzarella shreds then sprinkle remaining mozzarella over top.

Bake for 20 minutes or until cheese has melted. Serve hot and enjoy!
