Homemade Reese’s Peanut Butter Coconut Eggs
Extremely similar to my regular Reese’s Peanut Butter Egg recipe but used mainly Coconut Secrets brand coconut products. These are a healthier take on the original. Sweetened with coconut sugar and completely gluten-free.
Ingredients
1 cup chocolate chunks or chips
1 tablespoon coconut oil
2/3 cup all natural creamy peanut butter (or any smooth nut butter)
1/4 cup coconut flour
1/4 cup coconut sugar
Instructions
Mix together peanut butter, flour, and sugar in a small bowl, place in freezer for 10 minutes.
In metal or glass bowl over a pot of water, add chocolate chunks and oil and melt over medium high heat. Stir until smooth. Turn heat to simmer.
Remove peanut butter mixture from freezer and divide into 6 small golf balls. Roll and form into an egg shape and place on a wire rack over a parchment paper covered baking sheet.
Spoon chocolate mixture over the tops of the peanut butter eggs and cover all exposed peanut butter. You can also dip them carefully into the chocolate to completely coat or use an egg shaped silicone mold.
Place back in freezer and allow to firm up. Store in an air-tight container in the freezer until you’re ready to enjoy.
