RAW VEGAN “potAto” sAlad
The freshest side you can serve that will truly fool any potato lover into thinking this actually contains potato!
Ingredients
1 can Hearts of Palm, drained and chopped (you can also use a large peeled zucchini to make it truly raw)
1 celery stalk, diced
1 raw ear of corn, kernels stripped
1 cup spinach, roughly chopped
6 baby heirloom tomatoes, quartered
1 green onion, small diced
Dressing:
1 cup raw cashews
1 tablespoon mustard
1 tablespoon apple cider vinegar
1 teaspoon onion powder
1 teaspoon pink salt
1/2 teaspoon black pepper
1/2 teaspoon dried dill
1/2 teaspoon paprika
1/2 cup water + more to thin
Instructions
Combine all salad ingredients in a bowl.
Combine dressing ingredients in a high speed blender and blend on high. Add a tablespoon of water at a time until sauce is smooth but still a bit thick.
Fold dressing into salad until completely coated.
Serve with more dill and paprika on top.
Store leftovers in fridge.
