Vegan Chocolate Coconut Waffles
Deliciously light and fluffy waffles that’ll be perfect for a romantic breakfast in bed or to whip up for your kids on Valentine’s Day morning! You can use this waffle recipe as a base and add berries instead of chocolate, if you desire. I used Coconut Secrets brand coconut products for my ingredients and they work so well for this recipe! Ingredients
1/2 cup coconut flour
3/4 cup organic unbleached flour (or gluten-free flour)
2 tsp baking powder
1/4 tsp kosher salt
3 tbsp coconut sugar
1 3/4 cup unsweetened almond milk (or favorite non-dairy milk)
2 tbsp coconut oil, room temperature
1 1/2 tsp vanilla extract
1/2 cup chocolate chunks, finely chopped
Instructions
Turn on waffle maker to heat up.
Combine all dry ingredients.
Combine vanilla and room temperature coconut oil then add to dry ingredients.
Stir in non-dairy milk - first add 1 cup then slowly stir in the remaining 3/4 cup. Mixture will be thick but light and fluffy.
Fold in finely chopped chocolate chunks.
Pour 1/4 cup of batter into heated waffle maker. If yours is not non-stick, use pure avocado or coconut oil spray to prevent sticking. Close lid.
Once golden brown, use a fork to carefully pull out of waffle maker.
This will make about 12 mini waffles.
Top with frozen Cocowhip, nut butter or maple syrup.
Leftovers can be reheated in a toaster or toaster oven.
