Vegan lemon arTichoke salad

Fantastic fresh salad that’s perfect to bring to a pot luck or BBQ.

Ingredients

1 14oz can artichoke hearts, drained and chopped

1 14oz can hearts of palm, drained and chopped

2 tablespoons capers

2 tablespoons avocado or olive oil

juice of 1 lemon

2 garlic cloves, minced

1/2 tablespoon dried parsley

1 tablespoon dried chives

Pink salt and fresh ground pepper

Instructions

In a medium sized bowl, whisk together oil, lemon juice, garlic, parsley, chives, salt and pepper.

Add remaining ingredients, toss well and allow to marinate in the fridge for an hour before serving.
