Vegan veggie bReakfast scramBle

Love a vegan scramble and love that you can pretty much use anything you have on hand to whip up this for breakfast, lunch, or dinner. Play around with ingredients and make some hash browns or breakfast potatoes for the side.

Ingredients

1 tablespoon avocado oil

1 cup button mushroom, chopped

1/2 cup green onion, diced

2 cups spinach

1 block extra firm tofu, crumbled OR 1 bottle Vegan Just Egg

Salt and pepper, to taste

Instructions

Over medium high heat, add oil and warm.

Add mushroom and green onion, cook down and allow liquid from mushrooms to cook out.

Once golden, add spinach and seasonings, allow spinach to wilt.

Add tofu or Just Egg, cook until golden.

Serve hot with a side of hash browns or breakfast potatoes (see recipe on my site).
