Vegan Banana ChOcolate granola bars

This is my baked granola bar recipe, I also have a stove-top granola bar recipe under “sweet” in the menu. These use up over-ripe bananas, leftover celery juice pulp and contains many superfoods. You can play around with the added ingredients by adding nuts, dried berries, superfood powders, etc. The options are endless.

Ingredients

1 flax egg (1 tbsp flax + 3 tbsp water)

3 ripe bananas, mashed

1 1/2 cup rolled oats (you can use gluten-free oats)

4 tablespoons pure maple syrup

1/2 cup smooth all-natural peanut butter (or other nut or seed butter)

1/2 cup celery pulp, blended to break up large pieces

2 tablespoons unsweetened coconut flakes

1 teaspoon baking soda

1 teaspoon ground cinnamon

1 teaspoon vanilla extract

1/4 cup Enjoy Life chocolate chunks

1 tablespoon hemp seeds and maca powder (optional)

Instructions

Preheat oven to 375.

Make flax egg, set aside to thicken.

In a medium bowl, mash banana and add all ingredients to bowl (except for flax egg and chocolate chunks).

If you’re not using celery pulp, use 1/4 cup - 1/2 cup less oats. You want your batter to be moist but not super thick or runny.

Once ingredients are well combined, add flax egg, stir well then fold in chocolate chunks.

Pour batter into a parchment lined 9x9 baking dish.

Bake for 20 minutes, until the top is firm to the touch, make sure a toothpick comes out clean.

Allow to cool completely before cutting into squares or bars.

Store in an air-tight container at room temperature.
