Vegan meaty mUshroom pasta

Whipped this sauce up in under 15 minutes and it was so hearty and delicious! Tons of flavor with minimal ingredients.

Ingredients

2 vegan Italian sausages (I used Field Roast), rough chopped

2 cups white button mushroom, sliced

1 tablespoon olive oil

1 can tomato sauce (I love Muir Glen)

3 cups spinach

1 cup curly kale, de-stemmed

Seasonings, to taste: garlic salt, pink salt, Italian seasoning

Pasta (Banza chickpea pasta is my favorite), cooked al dente

Optional: vegan shredded parmesan cheese

Instructions

In a large sauté pan, heat oil over medium heat.

Add mushroom and sausage, allow both to golden/char.

Add seasonings and greens, allow greens to wilt.

Add can of sauce, simmer until desired pasta is ready (I love a chickpea pasta).

This will make tons of leftovers for meals for the week!
